Salad with meat


Preserving food is a big topic in Icelandic cuisine - e.g. boiling, preserving, etc. The preserved food is then consumed later, like the green beans and mushrooms from the jar in this recipe.


Ingredients for 4 persons


400 g cooked lamb
1 jar of green beans
1 small jar of mushrooms
1 head of lettuce
2 hard-boiled eggs

2 Tbsp rapeseed oil
1 Tbsp vinegar
1 tsp mustard
1/2 tsp coarse sea salt
1 pinch of black pepper
1 tsp chopped parsley


Ingredients

Cut the cooked lamb into small pieces.


Drain the beans and chop them finely.


Drain the mushrooms and chop them as needed.

Wash the lettuce thoroughly, pick and chop it into small pieces.


Peel and dice the hard-boiled eggs.


Place meat, beans, mushrooms, lettuce and eggs in a large bowl. Chop and add the parsley and mix everything thoroughly.


For the sauce, put the rapeseed oil with the vinegar, mustard, salt, pepper and parsley in a small container, whisk thoroughly and pour over the salad immediately before serving.
