Eplaskyr

Apple Skyr


Apple trees don't actually grow in Iceland. In the past, apples were therefore something very special, expensive, and had to be imported. Apples were perhaps a great luxury at Christmas. Therefore, many older Icelanders still associate the scent of apples with Christmas.

Today, you can basically buy apples in stores all year round, so they have become an integral part of many Icelandic dishes.

Here's my first autumn recipe for you: a quick, easy dessert – vanilla skyr with apple compote and chopped nuts. It's so simple and delicious; my husband and kids were absolutely thrilled to lick the very last bits out of their glasses at dinner.


Ingredients for 4 glasses

350 g apple compote
450 g vanilla skyr
60 g sugar
1 tsp vanilla sugar, ground vanilla, vanilla paste or similar.

whipped cream
chopped nuts


Preparation

In a large bowl, combine the sugar with the vanilla sugar, ground vanilla, vanilla paste, or similar. (I mixed the sugar with some vanilla paste and some ground vanilla.)


Stir in the vanilla skyr.


Finally, add the apple compote and mix with a spoon.


Pour the apple-skyr mixture into dessert glasses or similar.

Before serving, garnish to taste with whipped cream and chopped nuts, brittle, or similar.

Jarðarberja skyrmús

Strawberry Skyr Mousse


On Sunday, May 12th, it was Mother's Day (mæðradagur).

After the recent publication of our strawberry book, we are still in strawberry mood - and not just us, but the whole family.

Child no. 2 was actually away for the weekend, but came by on Mother's Day evening with his friend and a load of fresh strawberries they had picked themselves. Cild no. 1 shares my enthusiasm for beautiful decorative items; she had treated herself to a awesome set of strawberry bowls that she lent me for some photos.

To use up the strawberries and to take some photos of the bowls, I prepared my current favorite dessert: Skyrmús .

I only discovered this recipe about a month ago and immediately fell in love with it.

For the skyr mousse, you'll need pure skyr, cream, and sugar with freshly grated lemon zest, vanilla, cardamom, and white chocolate. You can find the original recipe here in this blog post.

For my strawberry skyr today, I pureed 100g of fresh strawberries and mixed them with the skyr mixture, then simply served the whole thing with even more fresh strawberries.


Sometimes I realize how incredibly lucky I am to have all four of my children!

Ísköld jarðarberjasúpa

Ice cold strawberry soup with frozen skyr


This cold strawberry soup with frozen skyr cubes is ideal as a light, fresh main course or as a dessert in warm temperatures. The quantity is enough for 2 portions as a main course and for 4 portions as a dessert.

The recipe here is my current favorite recipe from our new book "Icelandic Strawberry Recipes" on hot days.

Personally, it's always particularly fun for me when I can compare old food photos of myself from the beginning of the blog with photos that I'm currently taking while revising my old recipes. Then I'm proud of the development I've made since then!



Ingredients

750 g fresh strawberries
180 g sugar
2 Tbsp grated lemon peel
1 Tbsp ground vanilla
200 ml cold water
2 Tbsp potato flour
2 Tbsp cold water

150 g skyr
1 Tbsp grated lemon peel
1 Tbsp sugar
1 tsp ground vanilla


Preparation

Wash, clean and chop the strawberries.


In a large pot, cook strawberries with sugar, vanilla and water over medium heat for about 20 minutes until the strawberries are soft. Pass everything thoroughly.



Mix the potato flour with 2 tablespoons of water in a glass, add it to the soup and bring to the boil, stirring constantly.


Chill the strawberry soup in the refrigerator overnight.

Mix the skyr with the lemon peel, sugar and vanilla and freeze in an appropriate ice cube container in the freezer.



Before serving, let the skyr cubes thaw a little and then add them to the cold soup.

Skyrmús með kökum og berjasósu

Skyr mousse with cookies and berry sauce


This is currently my absolute favorite skyr dessert recipe - with pure skyr, whipping cream and white chocolate. And add sugar with freshly grated lemon peel - the smell alone is wonderful!

I only recently learned about the recipe and have "cooked it" twice since then because I find it so delicious!


Ingredients for 4 servings

90 g sugar
1 organic lemon
450 g pure Skyr
1 tsp vanilla paste
1 - 2 tsp ground cardamom
350 ml whipping cream
100 g white chocolate

4 - 8 oatmeal cookies
2 Tbsp strawberry jam
2 - 4 fresh strawberries


Preparation

Wash the organic lemon, dry it and carefully rub the peel.

In a large bowl, mix the sugar with the grated lemon peel.


Add the skyr, add the vanilla paste and cardamom and mix the whole thing with a mixer or something similar.


Let the white chocolate slowly melt, let it cool down a little...


... and then stir into the skyr mixture.


Whip the cream until stiff.


Then add the whipped cream in portions to the skyr-chocolate mixture and mix by hand with a spoon.
Then put the mousse mixture in a large bowl or in portions into dessert glasses and chill in the refrigerator for at least 2 hours.


Then carefully crumble half of the cookies and spread the cookie crumbs over the skyr mousse.


Heat the strawberry jam so that it becomes liquid again and spread it over the biscuit crumbs.

Stick the remaining cookies into the mousse.

Wash, clean and chop the fresh strawberries and arrange on the dessert.


Serve the skyr mousse well chilled.

Skyrterta í hátíðarbúningi

Skyr dessert in holiday garb


"Skyrterta" actually means "skyr cake", but this "cake" is unbaked and is served in a large, shallow dish or something similar. It only takes a few minutes to prepare the recipe, but if possible it should be kept in the fridge for a few hours, then it tastes best.

I first got to know this type of "skyrterta" in the Icelandic Westfjords in 2015, but it is also common in other parts of Iceland.

Thanks to the decoration in the Icelandic national colors, this "skyrterta" also makes a special visual impression - just "skyrterta in holiday dress"!


Ingredients

200 g oatmeal cookies
50 g melted butter

400 ml whipped cream
1 tsp ground vanilla
2 Tbsp powdered sugar
1 tsp grated lemon peel
450 ml vanilla skyr

300 g fresh blueberries
6 - 8 fresh strawberries


Preparation

Crush the cookies in the blender. Place the biscuit crumbs in a suitable mold, mix with the melted butter and press into the bottom of the mold.


In a bowl, beat the cream with the vanilla, powdered sugar and grated lemon peel until stiff. Add the vanilla skyr and stir in gently.



Pour almost 200 g of the cream into a piping nozzle and set aside. Spread the rest evenly on the biscuit base.

Wash, clean and cut the strawberries into small pieces and wash the blueberries.


Distribute the strawberry pieces crosswise over the filling, use the piping bag to pipe small drops to the right and left of the strawberries and complete the flag with the blueberries.


Let the dessert set in the fridge for a few hours and then serve well chilled.

Grænmetis skyrdrykkur

Vegetable skyr drink


My husband continues to try to live as healthily as possible - and I do my best to support him. Here I came across a recipe for a skyr drink with lots of vegetables - with cucumber, peppers, small tomatoes and nice hot chili flakes.

However, my husband's first comment about this vegetable skyr drink was: "Oh, that tastes healthy!"

But after a few sips he finally found the drink to be quite tasty, nice and fresh and nice and spicy, thanks to the chili flakes.


Ingredients for 2 glasses

100 g red pepper
100 g cucumber
100 g cocktail tomatoes
200 g pure Skyr
100 ml cold water
1 Tbsp olive oil
1 pinch of salt and pepper
1 pinch of chili flakes


Preparation

Wash and clean the vegetables and cut them into coarse pieces.


Then put the vegetables in the blender with the skyr, water and olive oil and puree thoroughly.



Season with salt, pepper and chili flakes to taste, pour into the glasses and serve immediately.

Epla Skyr Boost

Apple Skyr Booster


Sometimes I don't really have time to cook on the weekend, so all I have during the day is a fresh Skyr booster.

This is a particularly uncomplicated, quick recipe, with vanilla skyr, an apple, some ground cinnamon and a few ice cubes.

Peel the apple, throw all the ingredients into the blender and puree them - you're done!


Ingredients for 2 servings

400 g vanilla skyr
1 apple
300 ml apple juice
1 tsp cinnamon
6 - 8 ice cubes


Preparation

Wash, peel and core the apple and then cut it into pieces.


Place all ingredients in a blender and puree thoroughly.

Pour the mixture into the glasses and serve immediately.
