Epla Skyr Boost

Apple Skyr Booster


Sometimes I don't really have time to cook on the weekend, so all I have during the day is a fresh Skyr booster.

This is a particularly uncomplicated, quick recipe, with vanilla skyr, an apple, some ground cinnamon and a few ice cubes.

Peel the apple, throw all the ingredients into the blender and puree them - you're done!


Ingredients for 2 servings

400 g vanilla skyr
1 apple
300 ml apple juice
1 tsp cinnamon
6 - 8 ice cubes


Preparation

Wash, peel and core the apple and then cut it into pieces.


Place all ingredients in a blender and puree thoroughly.

Pour the mixture into the glasses and serve immediately.

Skyr með súkkulaði og appelsínu

Chocolate Orange Skyr


Today in Iceland we celebrate bóndadagur, i.e. Men's Day.

The Old Icelandic calendar only knew two seasons, winter and summer. The winter month of Þorri #, the "drought month", begins on Friday between January 18th and 24th, i.e. on January 24th in this year 2025. On the first day of this month, the traditional feast Þorrablót was celebrated, which also paid special tribute to the master of the house. From this tradition came the bóndadagur, i.e. the “day of the landlord”.

Today bóndadagur has become “Husbands Day”; you give your husband flowers, treat him to delicious food or in other ways.

As a surprise for my husband today, I have this delicious chocolate skyr with dark chocolate and fresh orange. And afterwards we have a barbecue with the family present...

Ingredients for 2 servings

400 g pure Skyr
2 oranges
1 - 2 Tbsp baking cocoa
2 Tbsp honey
40 g dark chocolate


Preparation

Peel one orange, fillet it and cut it into small pieces.


Halve the other orange and squeeze it.

Crush the chocolate.

Mix the skyr thoroughly with the orange juice, baking cocoa and honey. Finally, stir in half (!) of the chopped chocolate.


Divide the Skyr mixture between two bowls, glasses or similar.

Garnish the chocolate skyr with the orange pieces and the remaining chopped chocolate and then enjoy.

Græn skyrskál

Green Skyr Bowl


My husband wanted the healthiest possible start to the year, so I try to include a lot of fruit and vegetables in our diet.

Here I tried a recipe for a nice green skyr bowl, with avocado, orange and spinach as well as some mint.

Finally, sliced ​​almonds and coconut flakes are added to the skyr bowl, on the one hand for the look - but above all for the feel, the crunchy almond flakes and the dried coconut flakes form an interesting contrast to the thick, soft skyr mixture when eating.


Ingredients per serving

200 g vanilla skyr
1 avocado
1 orange
1 handful of spinach
4 - 5 ice cubes
about 8 leaves of mint

1 tsp sliced ​​almonds and coconut flakes


Preparation

Peel and roughly chop the avocado and orange.


Wash the spinach leaves.

Put the pulp in a blender with the vanilla skyr, the spinach and the ice cubes as well as about half of the mint leaves...


... and puree everything thoroughly.


Place the mixture in a bowl, decorate with the sliced ​​almonds, coconut flakes and the remaining mint leaves and serve immediately.

Jólaskyrmús

Christmas Skyr Mousse


I just realized that I haven't shown you this quick recipe for a Christmas cinnamon skyr dessert yet. Okay, Christmas is over now, but before the poor recipe ends up lying dormant in the vault for the next 12 months, I'd better show it to you now.

Maybe you want to use up a few last gingerbread cookies or other Christmas cookies and I think cinnamon is always delicious anyway!


Ingredients for 2 servings

250 g vanilla skyr
250 ml whipping cream
70 g gingerbread or other cookies
1/2 tsp cinnamon
caramel sauce
chopped nuts
raspberries


Preparation

Whip the cream until stiff.


Mix half of the cream with the vanilla skyr and cinnamon.


Crush the gingerbread...


... and divide between two glasses.

Divide the Skyr mixture between the glasses.

Add a tablespoon of caramel sauce to the skyr in each glass.


Pour the remaining cream onto the dessert.

Decorate the cream with the chopped nuts and raspberries and then serve immediately.

Túnfisksalat með skyri

Tuna salad with skyr


If you're looking for a delicious dip for New Year's Eve or another nice occasion, I could also recommend this one - that is, if you like fish.

In any case, the fish thing is a bit of a critical point for my family - the majority of people are fine with grilled salmon, but beyond that it becomes difficult...

No matter - I think this tuna salad with crackers is delicious! For the part of the family that doesn't like fish, there's the cheese and bacon dip that we had at Christmas. At least I can always use it for my youngest!


Ingredients

180 g canned tuna (drained weight)
180g pure skyr
80 g sour cream
4 hard-boiled eggs
1/2 red onion
1 red pepper
1 tsp mustard
coarse sea salt
ground black pepper


Preparation

Peel and dice the hard-boiled eggs.

Peel half the red onion and cut it into small pieces.

Wash and clean the red pepper and cut it into thin strips, then cut the strips into small pieces.


Place the skyr and sour cream in a large bowl.

Add all remaining ingredients...


... and mix the whole thing thoroughly. Season with a little salt and/or pepper to taste.


Serve the tuna salad with crackers or similar as a dip.

Íspinni úr skyri og jarðarberjum

Skyr and strawberry popsicles


In my summer mood, I have a recipe for popsicles for you today, namely a skyr ice cream with fresh strawberries.

In addition to apple juice, some lemon juice is also added to the ice cream mixture.

To emphasize the fresh lemon aroma a little more, I added a few lemon verbena leaves. Of course the plant is not in any way typically Icelandic, I simply met it at the nursery that day and spontaneously fell in love with the smell. It actually hardly smells at all, but if you rub a leaf a little... it really packs a punch! I love the smell! So a little bit of it was allowed into the ice cream. But of course it works without it!


Ingredients

400 ml vanilla skyr
2 Tbsp lemon juice
120 ml apple juice
250 g fresh strawberries

Ice cream molds and wooden sticks


Preparation

Wash and clean the strawberries and cut them into pieces.


Process half of the strawberries with the vanilla Skyr, lemon juice and apple juice using a hand blender to form a uniform mass.


Add the remaining strawberry pieces and stir in carefully by hand.


Then pour the ice cream mixture into the molds and let it freeze in the freezer overnight.


Carefully remove the ice cream from the mold, let a little water run over the outside of the mold if necessary, and then enjoy it slightly thawed.

Skyrkökur með jarðarberjum

Skyr dessert with strawberries


Villijarðarber, or wild strawberries, grow in Iceland. In Iceland, wild strawberries are found throughout the country, but especially in the lowlands. The wild strawberries that grow in the wild are much smaller and much less sweet than the strawberry varieties grown for sale.

Strawberries for sale in Iceland grow in geothermally heated greenhouses .


Strawberries of the “ Sonata ” variety are often grown here - these berries have very evenly shaped, relatively large fruits with a sweet, fruity taste. Thanks to their firmness, the strawberries can be stored well and are wonderful for preserving or for jam or jelly - or, as here, as strawberry puree for dessert.


Personally, I like to decorate strawberry desserts with chopped pistachios - on the one hand because of the color effect, which is reminiscent of fresh strawberries with green on them, and on the other hand because of the feel. I love the difference between the sweet, soft strawberry cream and the crunchy pistachios!


Ingredients

350 g strawberries
3 Tbsp sugar
1 pinch of grated lemon peel
1 pinch of ground vanilla

70 g cookies
2 Tbsp melted butter
1 pinch of grated lemon peel

300 g vanilla skyr
200 ml whipping cream
1 pinch of grated lemon peel


Preparation

Wash, clean and chop the strawberries and put them in a pot together with the sugar, the grated lemon peel and the ground vanilla.



Bring to the boil and then simmer over medium heat for about 10 minutes until the mixture begins to thicken. Mash the strawberries. Remove the pot from the heat and let it cool.


Crumble the cookies...


... mix with the melted butter and some grated lemon peel and let cool.



Whip the whipping cream until stiff and mix with the vanilla skyr.



Then add about 3 tablespoons of cookie crumbs to each glass, ...


... put the Skyr mixture on top...



... and finish with the strawberry sauce.

Decorate to taste with fresh strawberries, chopped pistachios or similar.


The dessert is easy to prepare and then serve straight from the fridge.
