Fish salad
Ingredients for 4 persons
1 small head of cauliflower
600 g smoked fish
1 red pepper
1 green pepper
1 bunch of spring onions
1 bunch of radishes
2 Tbsp rapeseed oil
100 ml pure Skyr
1 tsp mustard
1/2 tsp coarse sea salt
1 pinch of black pepper
2 tsp chopped parsley
Preparation
First wash and clean the cauliflower and cut it into florets and cook them in plenty of salted water until soft. Then remove it from the water, drain well and let it cool.
Chop up the smoked fish (here: trout).
Wash, deseed and chop the peppers.
...as well as the radishes.
For the salad dressing, mix all the ingredients thoroughly in a bowl.
Finally garnish with chopped parsley and serve well chilled.
