Súkkulaðitrufflur

Chocolate truffles


Chocolate truffles are a confection that is traditionally made and enjoyed in Iceland in the run-up to Christmas.

Ingredients

450 g dark chocolate (70%)
300 ml whipping cream
70 g honey
125 g butter
100 g couverture
Cocoa powder for turning


Preparation

Put the whipping cream and honey in a saucepan and slowly bring to the boil.


Chop the chocolate and add it, then stir until the chocolate is well dissolved.


Add the butter in small portions and stir thoroughly.


Pour the mixture into a rectangular shape, preferably lined with cling film...


...and chill in the refrigerator for 10 to 12 hours.


Then take the mixture out of the mold and cut it into small, rectangular pieces.

Melt the couverture in a water bath and dip the truffles into the melted chocolate and then roll them in the cocoa powder.


Let dry on baking paper or similar...


...and keep it cool.

The chocolate truffles taste best fresh, but you shouldn't keep them for longer than 5 - 7 days.
