þorskur með skyrsósu

Cod in skyr sauce with angelica and seaweed


Ingredients

800g cod
1 tsp salt  
2 tbsp butter  
4 stalks of leeks  
2 tbsp dried angelica
1  Tbsp dried seaweed
150ml water

350g skyr
1 tbsp honey


Preparation

Wash the cod fillets, add salt and bring to the boil in a pot with plenty of water. Remove the pot from the heat and let it steep for another 5 minutes.


To make the sauce, melt the butter in a large pan. Meanwhile, wash and clean the leek and cut it into rings and fry it briefly in the butter.

Grind angelica and seaweed as carefully as possible...


...and add it to the pan.


Deglaze with water and continue to simmer.

Finally, remove the hot pan from the heat, stir in the Skyr and honey,...


...until a smooth sauce has formed and serve with the cod.
