Ástarpungar

Love balls

Literally translated "ástarpungar" means "love balls". In a supermarket they had been offered to us as a typically Icelandic specialty, so we tried - and they were delicious. Hence we had to make them by ourselves.

Ingredients for about 30 balls

2eggs
240 g sugar
900 g flour
2 tsp baking soda
1 tsp vanilla
1 tsp cardamom
180 g skyr
100 g raisins

1 kg vegetable frying fat


Preparation

In a large bowl, whisk the eggs and sugar into a creamy mass:

Add flour, baking soda, vanilla, cardamom and skyr, mix thoroughly and work into a firm dough.

Lastly add the raisins and knead well.


Form walnut-sized balls from the dough.

Heat the frying fat in a high pot

Place the balls into the hot fat. Depending on the pot's size, you can fry 4 to 6 balls at the same time. Fry them for about 4 minutes, turning regularly, until golden brown on all sides.


Then, with a ladle, remove the balls from the fat and leave to drain on kitchen roll.



Ástarpungar are delicious either warm or cold!
