þorskur með skyrsósu

Codfish in skyr sauce with angelica and seaweed

Ingredients

800 g  cod
1 tsp salt
2 Tbsp butter 
4 leeks
2 Tbsp dried angelica
1 Tbsp dried seaweed
150 ml water

350 g skyr
1 Tbsp honey

Preparation

Wash the cod fillets, salt them, put them in a pot with plenty of water and bring to the boil. Then take the pot from the cooker and let it stand for about 5 minutes.


For the sauce, melt butter in a large pan. Clean and wash the leeks, cut into rings and fry briefly in the butter.

Ground angelica and seaweed as finely as possible...


... and add them into the pan.


Cover with water and let it simmer.

Finally remove the pan from the cooker, add skyr and honey...


... until the sauce is smooth. Serve it together with the cod.
