Svampkaka

Sponge cake


Okay, this is NOT a post about my current Skyr diet. But it was my birthday and I treated myself to a really nice little but really rich birthday cake with beautiful fresh strawberries. You also have to be able to treat yourself!


Ingredients

225 g sugar
225 g softened butter
4 eggs
225 g flour
1 tsp baking powder
1 pinch of grated lemon peel

6 Tbsp orange juice

400 ml whipping cream
1 Tbsp sugar

250 g fresh strawberries


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Mix the sugar and butter in a large bowl until fluffy.


Then add the eggs and stir in.


Now add the flour, baking powder and grated lemon peel to the mixture and mix in carefully.


Then put the dough into 2 springform pans (diameter approx. 20 cm)...


...and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 20 minutes (test with a toothpick!).

Then take the cake layers out of the oven, let them cool slightly and then carefully remove them from the tin.


Then let the bases cool completely in the refrigerator.

Soak the first base with 2 tablespoons of orange juice.


Beat the cream with the sugar until stiff.

Halve four strawberries for decoration and set aside.


Mix the chopped berries with 3/4 of the cream.


Then pour the whipped cream onto the first cake layer and carefully spread it on top.


Then place the second base on top and also soak it with 3 tablespoons of orange juice.

Finally, sprinkle with powdered sugar, place the reserved cream in 8 small piles on the cake and place the halved strawberries on top. Then put the cake in the fridge...


...and serve well chilled.
