Fruit casserole
I love sweets - and even if I don't bake cakes that often because of Lent and such, then on Sunday afternoon there is at least a sweet dessert, fresh from the oven, with lots of fruit and Skyr cream. The two of us ate it as "lunch", but as a dessert it would have been enough for four people.
Ingredients
3 apples
300 g frozen berry mixture
1 egg
2 Tbsp brown sugar
1/2 tsp cinnamon
250 ml vanilla skyr
Preparation
Preheat the oven to 350 °F (180 °C) upper/lower heat.
Wash, peel, core and cut the apples into small pieces.
Place the apple pieces in a fireproof dish.
Spread the frozen berries on top.
In a bowl, beat the egg with the sugar and cinnamon until frothy.
Stir in the vanilla skyr...
...and then pour the mixture onto the berry mixture.
Then bake in a preheated oven at 350 °F (180 °C) upper and lower heat for 40 minutes.
Remove the casserole from the oven, let it cool briefly and then serve.
