Layered salad with ham


Layered salad used to be a “fashion food”; I also saw stylish pictures of it in Icelandic cookbooks and magazines from the 70s and 80s. Even if the basic recipe is more or less the same everywhere - Skyr is used here instead of mayonnaise, which makes the recipe a little less rich and compatible with my current Skyr diet.


Ingredients

100 g cooked ham
1 - 2 leek stalks
2 hard-boiled eggs
1 small jar of celery
1 small jar of carrots
1 small can of corn
1 small can of pineapple chunks
200 ml pure Skyr
100 g grated cheese


Preparation

First, drain the jar of celery and distribute the celery in a large salad bowl.

Drain the grated carrots and add them to the celery.


Drain the pineapple pieces from the can as well, collecting the juice (you will still need it!) and spreading it over the carrot sticks.


Cut the cooked ham into small pieces and spread on top.


Drain the corn and spread it over the ham pieces.


Peel the hard-boiled eggs and cut them into cubes and add them over the corn.


Wash and clean the leek and cut it into rings and spread over the egg pieces.


Mix the reserved pineapple juice with the skyr and pour over the layered salad.


Sprinkle with the grated cheese.


Let it sit in the fridge overnight and then serve.
