Óskadraumur

Pipe dream


I got to know this cake - at least something like it - during my Iceland vacation this year in a café in Patreksfjörður and I was absolutely thrilled. So I tried to "recreate" the recipe to some extent. I think I'm pretty close to my "template" - and it's definitely delicious!


Ingredients


for the dough

300 g dates
300 g dark chocolate
300 g ground almonds
2 Tbsp potato flour
6 egg whites
250 g brown sugar

for the cream

250 g cream cheese
50 g powdered sugar

for the casting

250 g powdered sugar
30 g baking cocoa
10 g cappucino powder
30 g melted margarine
3 Tbsp hot water


Preparation

Carefully chop the dates.

Grind the chocolate in the food processor.

Then mix the dates with the chocolate chips and the ground almonds and fold in the potato flour.


Beat the egg whites with the sugar until stiff.


Fold the egg whites into the chocolate-date mixture in portions.


Line a springform pan (approx. 24 cm in diameter) with baking paper, pour the dough into the pan, ...


...smooth it out and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for approx. 75 minutes.

Allow to cool thoroughly, then carefully remove from the tin and cut the cake in half horizontally.


For the cream, mix the cream cheese with the powdered sugar until smooth and spread on the top of the bottom half of the cake. Place the top half on top.


Finally, mix the powdered sugar with the baking cocoa and the cappucino powder and first add the melted margarine, then the hot water and whisk well.

Then pour the icing over the cake...


...chill in the fridge and serve well chilled with fresh whipped cream.
