Salmon with blueberry marinade
Ingredients
125 g blueberries
4 - 5 rosemary sprigs
1 Tbsp sugar
1 Tbsp lemon juice
1/2 tsp coarse sea salt
1/2 tsp black pepper
800 g salmon fillet
Preparation
Preheat the oven to 350 °F (180 °C) upper/lower heat.
Wash the blueberries and put them in a pot with the rosemary sprigs, sugar, lemon juice, salt and pepper.
Simmer over medium heat for about 10 minutes until a nice, thick mixture has formed. Remove the pot from the heat and carefully place the rosemary sprigs on a plate.
Place the salmon fillet in an ovenproof dish, brush with the blueberry marinade, place the rosemary sprigs on top and cook the whole thing in a preheated oven at 350 °F (180 °C) for about 15 to 20 minutes.
Then serve directly with salad and/or potatoes.
