Skyrfrauð

Skyr mousse tartlets


Ingredients for 4 persons

for the mousse
 

200 ml whipping cream
350 g skyr
1/2 tsp ground vanilla
1 tsp ground orange peel

2 env powdered gelatin
60 g sugar


for the ground
 
50 g margarine

50 g sugar  
2 eggs
100 g almond flour
50 g semolina
1/2 tsp ground vanilla
1 tsp ground orange peel



 
for the warm fruit salad

approx. 400 g chopped, mixed fruit
50 g water  
40 g sugar  
1 tsp ground cinnamon
1/4 tsp aniseed



Preparation

At the lecture or at least half a day before the planned meal, first prepare the base and then the cream, layer them on top of each other and let them cool thoroughly and solidify in the refrigerator.



For the ground

Melt the margarine in a saucepan.

Then add the sugar and mix thoroughly until the sugar has completely dissolved in the margarine.


Add the eggs one at a time and mix thoroughly each time.


Add the almond flour and mix.


Add the semolina and stir in as well.

Finally, add the ground vanilla and the grated orange peel and knead everything into a dough that is as smooth as possible.

Place in a baking pan lined with baking paper (for 4 portions of Skyrfrauð, a 22 cm springform pan is sufficient) and bake in a preheated oven at 325 °F (160 °C) for about 20 minutes, until the base begins to brown slightly around the edges.

Remove from the oven and use dessert rings to cut out the bases for the Skyrfrauð.


(If you don't have dessert rings, you can leave the base in the springform pan and then spread the Skyr cream directly on top. Finally, cut it into pieces of cake or something similar!)


For the cream

Whip the cream until stiff.

Add the skyr with the ground vanilla and the grated orange peel and mix.


Continue beating and stir in the envelope of powdered gelatin.

Finally add the sugar and mix everything thoroughly.

Fill into the molds with the dough bases...


...and put it in the fridge for at least 4 to 5 hours.

 

For the fruit salad

Wash, peel and cut the fruit into bite-sized pieces.


Add the sugar, cinnamon and anise.


   
Heat the water and pour it hot over the fruit with the sugar and spices. Let the whole thing steep for about 10 minutes.
 
Then lift the fruit out of the liquid and let it drain.


 
Remove the skyr mousse tarts from the tin, place them on the plates and arrange the warm fruit around the tarts.

Skyrís og súkkulaðisósa

Sky rice with chocolate sauce


 
Ingredients

3 eggs
3 Tbsp sugar
250 g pure Skyr
1 pinch of ground vanilla

60 g margarine
60 g dark chocolate
1 tsp cappuccino or cocoa powder
1 pinch of ground vanilla


Preparation

Mix the eggs with the sugar until foamy. Then add the skyr and vanilla and mix everything until smooth.


Pour the ice cream mixture into molds and let it freeze in the freezer for at least 2 hours.


For the chocolate sauce, carefully melt the margarine and chocolate in a water bath. Then stir in the cappuccino or cocoa powder and the ground vanilla. Allow to cool slightly and then serve with the Skyr ice cream as dessert.

Appelsínu- og skyr eftirréttur

Orange cream with skyr


 
Ingredients for 4 persons

2 - 3 organic oranges
250 ml whipping cream
100 g sugar
350 g plain skyr


Preparation

Wash the oranges thoroughly and grate the orange peel. Squeeze the oranges.

Beat the cream with the sugar in a tall bowl until stiff.

Add the skyr...


...and mix, then stir in half of the grated orange peel and the squeezed orange juice.


Arrange the cream in dessert bowls, sprinkle with the remaining grated orange peel and serve as dessert.

Bláberja- og súkkulaðidrykkur


Blueberry and chocolate drink


Ingredients

350 g plain skyr
300 g frozen blueberries
3 Tbsp baking cocoa
2 Tbsp sugar
5 ice cubes


Preparation

Put all ingredients in the blender,...


...puree thoroughly and then serve immediately.

Skyrnaise

Homemade “Mayonnaise” made from Skyr



Ingredients

1 egg yolk
2 Tbsp vinegar
80 ml rapeseed oil
250 g skyr
1 tsp sugar
1 tsp mustard


Preparation

Carefully mix the egg yolks with the vinegar in a tall mixing bowl.

Then slowly and carefully pour in the oil while stirring constantly.


Fold in the skyr and then season the entire mixture with sugar and mustard.


Chill the finished "Skyrnaise" and serve as a dip, for example with baked potatoes with thyme, as here.

Skyrkaka

Skyr cake


Skyr is particularly popular in "healthy cuisine" in Iceland and you can often find skyr as an ingredient in Icelandic diabetic recipes, like this Skyrkaka!


Ingredients

150 g coarse oat flakes
2 Tbsp birch sugar
50 g melted butter

2 Tbsp jam

350 g plain skyr
100 g whipping cream
2 Tbsp birch sugar
1 tsp cinnamon
1 tsp grated vanilla


Preparation

Mix the oat flakes with the birch sugar and the melted butter...


...and place in a springform pan (approx. 22 cm) lined with baking paper. Bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 10 minutes.

Remove the base from the oven, let it cool briefly and spread with the jam. Then let it cool down well.


For the Skyr cream, whip the cream until stiff. Then add the skyr, birch sugar, cinnamon and vanilla and mix everything until smooth.


Carefully pour the skyr mixture onto the cake base and smooth it out...


...and chill in the fridge for at least 4 hours before serving.

Bláberjasíld með skyrsósu

Blueberry herring in skyr sauce


Ingredients for 6 people

600 g pickled herring
200 g plain skyr
150 g Miracle Whip (10%)
1 tsp sea salt
200 g fresh blueberries


Preparation

Mix the skyr with the Miracle Whip and the salt.


Cut the pickled herring into bite-sized pieces and mix with the Skyr marinade.


Wash the blueberries and stir in half of them, then arrange the remaining blueberries on the blueberry herring for decoration.


The bláberjasíld is traditionally served with fresh rúgbrauð.

Looks like a delicious dessert... and it is delicious, but it's not a dessert!

Appelsína skyr

Orange Skyr


Ingredients for 4 desserts


4 oranges
400 g plain skyr
150 g butter biscuits
100 g white chocolate
3 Tbsp powdered sugar
1 tsp ground vanilla
1 tsp cinnamon


Preparation

Peel the oranges and puree them thoroughly in the blender.

Grind the butter biscuits and chop the chocolate.

Set aside 2 tablespoons each of the ground cookies and the chopped chocolate.

Mix the rest thoroughly in a large bowl together with the skyr and the pureed oranges, ...



...season to taste with the powdered sugar, vanilla and a little cinnamon.


Divide the skyr mixture between 4 dessert glasses, sprinkle each with 1/2 tablespoon of cookie crumbs and chopped chocolate and leave to freeze in the freezer for at least 2 hours.

Allow to thaw in the refrigerator for about 1 hour before serving.

Skyrdrykkur

Skyr drink


Whereas skyr is sold in some countries outside of Iceland, it's different for skyr drinks. In Iceland you can get Skyrdrykkur in practically every supermarket, no matter how small. Of course, you can make it yourself with skyr!


Ingredients per jar

250 ml skyr
80 g frozen blueberries
30 g frozen strawberries
1/2 ripe banana
5 ice cubes


Preparation

Put all the ingredients in a blender, puree everything thoroughly, strain through a sieve and then enjoy straight away!

Skyrdrykkur "Orka"

Skyr drink “Energy”


By the way, the name of this Skyr drink has nothing to do with "Orca = whales", but "orka" simply means "energy" or "power" in Icelandic. The term is also regularly found in the calorie information on packaged foods.


Ingredients

2 bananas
1 papaya

1 pineapple
3 juice oranges
450 g plain skyr
2 Tbsp agave syrup
 

Preparation


Peel and chop bananas, papaya and pineapple...


 
...and puree together in the blender.

Halve the oranges and squeeze them.

Then mix the pureed fruit thoroughly together with the skyr and the freshly squeezed orange juice and season with the agave syrup.



Then serve fresh!

Skyrkúlur

Skyr balls (confectionery)

Ingredients

180 g plain skyr
40 g fine oat flakes
2 tsp baking cocoa
1 tsp cappuccino powder
2 Tbsp coconut flakes
1 Tbsp sugar

For the coating:
2 Tbsp coconut flakes
40 g dark chocolate (85%)

Preparation
 
Stir skyr and oat flakes. Let it shortly swell.

Add cocoa, cappuccino powder, ...


... coconut flakes and sugar and process it to a smooth mixture.

Using your hands, form about 30 small, barely walnut-sized balls and put them into the fridge.


Roll 15 of the balls in coconut flakes.
For the other 15 ball, melt chocolate in a water bath, roll them in the melted chocolate ...


... and place them on a sheet of baking paper to drop off.

Put the balls for at least half an hour into the refrigerator. Serve them well cooled.

The confectionery ball can be kept in the refrigerator for some days.
