Pönnukökuterta með banana-síld

Pancake cake with banana herring


Ingredients for the pancakes
 
200 g light flour
15g sugar
1/4 tsp salt
1/4 tsp baking powder
1 egg
1/2 tsp vanilla
25g margarine
Milk (as needed)


Ingredients for the Banana Sild

4 marinated fried herring fillets
2 Tbsp mayonnaise
3 Tbsp sour cream
1 chopped onion
2 Tbsp mango chutney
1 Tbsp sugar
1 tsp lemon juice
1 banana  

Ingredients for the cake topping

1 Tbsp mayonaise
1 Tbsp sour cream
1 Tbsp mango chutney
1 banana

 
Preparation

First bake half a batch of pancakes according to the recipe for Pönnukökur :

Mix the flour with the sugar, salt, vanilla, baking powder and eggs until the dough is smooth. Then put it in the fridge for about an hour.

Then melt the margarine and add it to the dough. Then add as much milk as needed until the dough is smooth and thin.
 
Heat the pancake pan and lightly grease it. Pour the batter very thinly into the pan and fry the pancakes until golden brown on both sides.


Then prepare the banana síld :

Mix the mayonnaise with the sour cream, chopped onion, mango chutney, sugar and lemon juice in a large bowl.

Pat the fried herring fillets dry and cut them into as small pieces as possible for the cake topping. Peel the banana and cut into thin slices. Add the herring and banana to the remaining ingredients and mix thoroughly.


Now layer the Pönnukökuterta :

Spread the herring salad on the first pancake, place the next pancake on top and also spread the salad on top, and the third pancake in the same way. Finally, place the fourth pancake on the cake.

Separately, mix a tablespoon of mayonaise with a tablespoon of sour cream and a tablespoon of mango chutney and then spread it on the fourth, topmost pancake.

Cut the banana into thin slices and decorate the pancake cake with them.


Let it cool a little in the fridge and let it solidify, then cut into cake pieces and serve.
