Icelandic roulades
"Beinlausir fuglar" translates to "boneless birds" - basically they are Icelandic roulades that are traditionally cooked from horse or lamb meat. Of course, you can also use other types of meat depending on your taste, shopping options or budget.
Ingredients for 6 people
50 g margarine
1 chopped onion
6 roulades
100 g sliced bacon
salt and pepper
500 ml water
30 g flour
depending on your taste:
sour cream
Rabarbarasultu
Preparation
The meat, cut into thin slices, season with salt and pepper and top with a slice of bacon. Roll up the meat and tie it with twine.
Heat the margarine in a hot pan, add the chopped onion and fry the meat on all sides.
Then take the finished fried meat out of the pan and keep it warm in the oven at 175 °F (80 °C) or heat it through the inside.
Pour the water into the frying pan, add the flour and season with salt and pepper.
If you like, you can also refine the sauce with sour cream and/or Rabarbarasultu.
The "boneless birds" are traditionally served with potatoes, green peas and rabarbarasultu.
