Pönnukökur

Icelandic pancakes


Ingredients
 
400 g light flour
30g sugar
1/2 tsp salt
1/2 tsp baking powder
2 eggs
1 tsp vanilla
50g margarine
Milk (as required)



Preparation

Mix the flour with the sugar, salt, vanilla, baking powder and eggs until the dough is smooth. Then put it in the fridge for about an hour.

Then melt the margarine and add it to the dough.

If the dough is not smooth enough, add a little more milk as needed.

Heat the pancake pan and lightly grease it.

Pour the batter very thinly into the pan and fry the pancakes until golden brown on both sides.


Then spread the finished pancakes with sugar, sugar and cinnamon or Rabarbarasultu or similar and roll them up.  


  In Iceland, the rolled pancakes are then served cold.
