Lúðusúpa

Halibut soup


Ingredients

600 g halibut fillets
500 ml vegetable stock
1 tsp fish sauce
2 medium potatoes
2 egg yolks
400 ml whipping cream
7 dried plums
1 tsp honey
pepper and salt


Preparation

Peel and dice the potatoes and halve the dried plums.

Then put the fish fillets with the potato pieces and the halved prunes in a large pot and cook over medium heat with the vegetable stock and a teaspoon of fish sauce for about 20 minutes.


Then remove the fish and plums from the soup again and puree the soup.

Stir the egg yolks and cream into the soup.


Cut the halibut into pieces and add it back into the fish soup along with the plums.

Then season the soup with a little honey, salt and pepper and serve with fresh bread.


The recipe is enough as a starter soup for 6 people.
