Heavenly cookies
Ingredients
125 g coconut flakes
125 g sugar
3 egg whites
200 g marzipan
Zest of 1 lemon
175 g chopped chocolate
Preparation
Preheat the oven to 350 °F (180 °C).
Grind the coconut flakes small and toast them in a pan, then let them cool again.
Beat the egg whites until stiff, then sprinkle the sugar into the egg whites and mix everything together.
Chop the marzipan into small pieces and then fold it into the egg white mixture.
Then carefully stir in the roasted coconut flakes and the chopped chocolate pieces.
Line the baking tray with baking paper and carefully place the dough onto the tray using teaspoons, leaving enough space between the heaps of dough.
Bake in the oven at 350 °F (180 °C) for about 15 minutes.
Let the cookies cool on the tray until they are a little firmer and then carefully remove them from the baking paper.
