Piparkökur

Gingerbread

Here's a new recipe for very fiery Icelandic gingerbread!

Ingredients

720 g flour
2 tsp baking soda
360 g brown sugar
250 g melted margarine
1 egg
1/2 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp ground cloves
1/2 tsp ground nutmeg
2 tsp cinnamon
1 1/2 Tbsp ground ginger
200 g chocolate couverture

Preparation

Mix the flour with the baking powder and brown sugar.

Mix the melted margarine and egg with the dry ingredients.

Then add the pepper, cayenne pepper, cloves, nutmeg, cinnamon and ginger and work everything into a smooth ball of dough.

Put the dough in the fridge for at least an hour so that it gets the right consistency.

Roll out the dough in portions on a work surface sprinkled with flour, cut out with molds...

...and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 10 minutes.

Allow the gingerbread to cool briefly.

Melt the chocolate coating in a water bath and spread it over the finished gingerbread cookies.

Let the gingerbreads with the chocolate dry well - and then enjoy the fiery gingerbreads!
