Daisy syrup
Ingredients
200 g daisy flowers
2 Tbsp grated lemon peel
1 Tbsp lemon juice
500 ml water
500 g brown raw cane sugar
Preparation
Place the collected daisy flowers with the stem in a large pot, add the grated lemon peel and the lemon juice.
...and pour 500 ml of boiling water over everything. Bring to the boil briefly, put the lid on the pot and let it steep for at least 4 hours.
Then strain the daisies...
... and put it in a fresh pot, add the raw cane sugar and bring everything to the boil, let it cook for about half an hour to three quarters of an hour, maybe a little longer so that the syrup becomes nice and thick.
Fill the syrup hot and store it in suitable containers in a cool, dry place.
An ideal accompaniment to fresh waffles ! :-)
