Breaded haddock with blue cheese sauce

Ingredients

For the breaded fish

400 g haddock
1 egg
60 ml milk
2 Tbsp flour
1/2 tsp salt
1/2 tsp pepper
3 Tbsp butter
60 g breadcrumbs

For the mold cheese sauce

500 ml vegetable broth
2 Tbsp blueberry jam
100 g blue cheese
2 Tbsp potato flour
2 Tbsp cold water

Preparation

Preparation for the fish

Cut the fish into bite-sized pieces and season with salt and pepper.

Prepare three soup bowls - whisk the flour on the first plate, whisk the milk and egg on the second plate and prepare the breadcrumbs on the third plate.

Dredge the fish pieces one by one in the flour, egg milk and breadcrumbs.

Heat the butter in a large pan and briefly fry the breaded fish on each side.

Then keep the fried fish pieces warm in an ovenproof dish in the preheated oven while you prepare the sauce.

Preparation of the mold cheese sauce

Heat the fish broth in the pan.

Add the jam and blue cheese and stir in thoroughly.

Mix the potato flour separately with the cold water and then add it to the cheese sauce to thicken.

Serve the fried, breaded haddock with the blue cheese sauce and, for example, fries and salad.
