Hindberja-mintu-ís

Raspberry peppermint ice cream



Ingredients

300 g frozen raspberries
2 Tbsp brown sugar
250 g vanilla yoghurt
10 g peppermint candies


Preparation

Put the yogurt in the blender, add the frozen raspberries in portions and strain everything thoroughly.


Mix the smooth mixture with the sugar.


Finally, add the peppermint candies and mix thoroughly.


Let the ice cream mixture freeze in the ice cream maker (or in the freezer if necessary, but the ice cream maker will make it “fluffier”).


Even if it's an Icelandic recipe - this is really the ideal summer ice cream for hot days, fruity and wonderfully fresh thanks to the peppermint candies!
