Seafood soup
This is currently my personal favorite seafood soup!
Ingredients for 4 persons
2 Tbsp butter
1 stalk of leek
2 carrots
100 g potatoes
2 handfuls of fresh herbs (cilantro,
chives and parsley,
if available also thyme and tarragon)
300 g cod
300 g redfish
400 ml decoction of shellfish
300 g pureed tomatoes
2 Tbsp sugar
2 Tbsp apple cider vinegar
100 ml apple juice
100 g crabs
100 g shrimp
250 ml whipping cream
1 tsp coarse sea salt
1 pinch of black pepper
Preparation
Heat the butter in a large pot.
Peel, clean and chop the leek, carrots and, if necessary, the potatoes if they are not fresh small potatoes.
Wash and chop the herbs.
Fry the vegetables and herbs in the butter for a few minutes.
Clean the fish and cut it into bite-sized pieces.
Add the fish with the fish stock, the pureed tomatoes, the apple juice, the vinegar and the sugar and simmer for about 5 minutes.
Add the crabs and shrimps and simmer briefly.
Finally, pour in the cream, season with salt and pepper and then serve.
We had very tasty Kryddbollur , i.e. herb rolls, nicely spread with butter.
