Apple soup with rusks
It's fall - so it's time for fall recipes and warm soups. I know not everyone loves warm fruit soups, but I really like them!
Ingredients for 4 persons
375 g fresh organic apples
1 liter of water
3 Tbsp sugar
1 tsp cinnamon
1 Tbsp potato flour
100 ml cold water
60 - 70 g rusks
Preparation
Wash and peel the apples and remove the cores.
Boil the shells and cores in half a liter of water for about 20 minutes.
Roughly chop the peeled apples and place the pieces in the other half liter of water in a large pot.
Strain the boiled peels and cores and pour the apple water into the pot with the apple pieces.
Now bring the mixture to the boil, sprinkle with the sugar and cinnamon...
...and cook until the apple pieces are soft.
Now mix the potato flour with the cold water in a glass,...
...add it to the apple soup and use it to thicken.
Then serve the warm apple soup with rusks - fresh, warm rusks taste best.
