Strawberry ice cream


Icelandic ice cream recipes... there are no ice cream recipes in my old Icelandic cooking and home economics books from the 19th century. In one book there was the keyword "ice" - but that was about storing ice: you dig a pit in the garden, line it with dried hay or algae, stack the beaten blocks of ice on top and cover the pit Make sure that the opening of the pit faces north. OK...

So here's a slightly newer recipe for a wonderfully uncomplicated and very fruity strawberry ice cream.



Ingredients

120 g sugar
230 g water
450 g frozen strawberries
1 Tbsp lemon juice
or grated lemon peel


Preparation

Put the sugar and water and, if available, the grated lemon peel in a pot, ...


...bring to the boil and simmer for about 10 minutes.


Grind the frozen strawberries with the warm sugar water and, as an alternative for the lemon peel, lemon juice in the food processor.


Then pour the mixture into an ice cream maker and...


...approx. Freeze in the ice cream maker for 1 hour, stirring constantly.

Then serve the strawberry ice cream straight from the ice cream maker or, if stored in the freezer, slightly thawed.

It tastes especially delicious with a few fresh strawberries on the side!
