Ávaxtakaka með kremi

Fruit cake with cream


This cake was for my daughter's birthday - she loves carrot cake , but I only had it for her boyfriend's birthday last month. This time she wanted "something with fruit - surprise me!" And then I went looking for delicious Icelandic recipes for Ávaxtakaka, or fruit cake - and ended up here.

Ingredients

3 eggs
250 g butter
250 g brown sugar
375 g flour
1 tsp baking powder
1 tsp baker's ammonia
2 tsp cinnamon
2 carrots
150 g chopped walnuts

1 can of mango (approx. 220 g)

100 g butter
250 g cream cheese
350 g powdered sugar
1 Tbsp lemon juice
1 Tbsp grated lemon peel


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Mix the eggs with the butter and sugar until foamy.


Add the flour, baking powder, baker's ammonia and cinnamon and mix.


Finally, grate the carrots finely and stir them in together with the chopped walnuts.


Then put the dough into a springform pan (approx. 26 cm) lined with baking paper...


...and bake well in the preheated oven at 350 °F (180 °C) for about 60 minutes.

Then let the cake cool thoroughly.

Carefully remove it from the mold and cut it crosswise so that you have two cake layers.

For the cream, mix the butter with the cream cheese, powdered sugar, lemon juice and grated lemon peel in a suitable container to form a nice cream.


Spread half of the cream on the bottom cake base,...


...top with the drained mango pieces,


...place the top layer on top and carefully spread the remaining cream on top.


It's best to leave it in the fridge overnight...


...and then serve well chilled.
