Kálpottréttur

Cabbage stew with skyr


Ingredients

1 white cabbage
2 tart apples
350 g skyr
1 tsp caraway
2 tsp pepper  


Preparation

Preheat the oven to 275 °F (140 °C) upper/lower heat.

Wash and clean the cabbage and cut it into thin slices.


Wash, peel and grate the apples, then mix with the cabbage.


In a separate bowl, mix the skyr with the cumin and pepper and stir until smooth.


Add the seasoned skyr mixture to the apple and cabbage mixture and mix thoroughly.


Then put the whole thing in a baking dish and bake in a preheated oven at 275 °F (140 °C) for about 1 hour until the cabbage is nice and soft.


An extremely interesting but also delicious vegetable side dish - here with grilled wild salmon and freshly baked Skyr flatbreads (you can find the recipe for the Skyr flatbreads here !).
