Grænkálssalat með furuhnetum

Kale salad with pine nuts


Kale ("grænkál") is a fast-growing type of collard greens. The cabbage is hardy, but does not tolerate heat or moist soil.

While from Germany I was used to cook kale always for a long time, here in Iceland it is also often prepared raw as a salad - for example as a kale salad with blueberry dressing , with apples, dried berries and nuts or, as here, very crunchy and fresh with blue cheese , pear and pine nuts!


Ingredients

200 g kale
3 - 4 Tbsp oil
120 g blue cheese
1 pear
40 g roasted pine nuts


Preparation

Wash, tear or chop the kale and place it in a large bowl


Carefully chop the blue cheese and add it to the bowl with the kale.


Wash the pear, peel it, remove the core and then cut the quarters into small pieces.


Add the pear pieces to the bowl.


Then add the pine nuts to the salad.


Finally, pour the oil over the salad, mix everything thoroughly and then serve the salad straight away.

By the way, we had grilled salmon as a side dish - a perfect summer meal in Iceland!
