Chocolate Booty


This is a very classic Icelandic sponge cake, quickly and easily mixed together, with a little flour, but a lot of butter or margarine and sugar, mostly powdered sugar.


Ingredients

120 g margarine
60 g brown sugar
60 g powdered sugar
3 eggs
130 g flour
1 tsp baking powder
1 Tbsp baking cocoa

125 g margarine
125 g powdered sugar
3 Tbsp baking cocoa


Preparation

Mix the margarine with the brown sugar, powdered sugar and eggs in a large bowl.


Then add the flour, baking powder and baking cocoa...


...and work everything into a smooth dough.


Line a loaf cake tin with baking paper, pour in the dough...


...and bake at 350 °F (180 °C) for about 25 minutes.


Then take the cake out of the oven and let it cool down a little (important so that the cream on top doesn't melt!).


For the cream, mix the margarine with the sugar and the baking cocoa until creamy...


...and spread it on the outside of the cake.

Allow to cool thoroughly, chill in the refrigerator so that the cream firms up a little, and then serve well chilled.
