Ostabollur í súpu

Cheese balls in soup


I found the recipe for these cheese balls in my beloved old Icelandic cookbook from the 1950s - and spontaneously fell in love!


Ingredients

50 g margarine
100 g spicy cheese
1 egg
1 pinch of coarse sea salt
1 pinch of ground pepper
1 pinch of paprika powder
Breadcrumbs


Preparation

Stir the margarine until foamy.

Grate the cheese...


...and mix together with the egg and margarine.


Season with salt, pepper and paprika.


Then add the breadcrumbs until the dough has the right consistency.


Then let the dough firm up in the fridge for about 1 hour.

Bring water to the boil in a large pot, use a teaspoon to make small balls of the dough...


...and then let the balls cook in the water for about 5 minutes.


Then serve the cheese balls as an accompaniment to a vegetable soup.
