Laxabollur með sósu

Salmon meatballs with sauce


This is a pretty uncomplicated, quick recipe for salmon cakes - and thanks to the peppercorns, it's really spicy too!


Ingredients

800 g fresh salmon
1 bunch of spring onions
1 tsp ground cinnamon
1 tsp ground chili

1 tsp ground nutmeg
1 tsp coarse sea salt
1 tsp black peppercorns

2 Tbsp rapeseed oil

150 g pure Skyr
1 Tbsp lemon juice
1 pinch of black pepper
1 pinch of coarse sea salt
1 cucumber


Preparation

Cut the salmon into rough pieces.


Wash and clean the spring onions and chop them roughly.


Put the salmon, spring onions, cinnamon, chili and nutmeg as well as salt and pepper in a blender...


...and work everything into a smooth dough.


Form 12 meatballs out of the dough with your hands.


Heat the oil in a pan and add the salmon meatballs to the pan in batches and then fry on both sides over a medium heat for about 3 minutes until the salmon meatballs are golden brown and cooked through.


Then keep the finished meatballs warm in the oven at 175 °F (80 °C) upper and lower heat.


For the sauce, mix the skyr with the lemon juice, salt and pepper.


Wash and peel the cucumber and scrape out the seeds with a spoon.


Then grate the cucumber into the skyr mixture...


... and stir.


Then serve the warm salmon meatballs with the cold Skyr sauce.
