Apple soup with rusks

It's fall - so it's time for fall recipes and warm soups. I know not everyone loves warm fruit soups, but I really like them!

Ingredients for 4 persons

375 g fresh organic apples
1 liter of water
3 Tbsp sugar
1 tsp cinnamon
1 Tbsp potato flour
100 ml cold water
60 - 70 g rusks

Preparation

Wash and peel the apples and remove the cores.

Boil the shells and cores in half a liter of water for about 20 minutes.

Roughly chop the peeled apples and place the pieces in the other half liter of water in a large pot.

Strain the boiled peels and cores and pour the apple water into the pot with the apple pieces.

Now bring the mixture to the boil, sprinkle with the sugar and cinnamon...

...and cook until the apple pieces are soft.

Now mix the potato flour with the cold water in a glass,...

...add it to the apple soup and use it to thicken.

Then serve the warm apple soup with rusks - fresh, warm rusks taste best.

Súkkulaðikaka

Chocolate cake

This chocolate cake contains a lot of chocolate and butter and eggs, but relatively little flour - and I think it tastes extremely delicious!

Ingredients

For the dough

200 g dark chocolate
200 g butter
4 eggs
2 Tbsp brown sugar
100 g wholemeal flour

For the cream

80 g butter
100 g dark chocolate
2 - 3 Tbsp honey

Preparation

Preheat the oven to 350 °F (180 °C) upper and lower heat and prepare the dough:

In a small saucepan over low heat, melt the dark chocolate with the butter...

... mix into a nice, uniform mass. Remove from heat and let cool slightly.

Separate the eggs.

Streak the egg whites with the sugar.

Fold the egg yolk into the chocolate-butter mixture.

Mix the egg white sugar mixture with the chocolate butter mixture.

Finally add the wholemeal flour and stir.

Place in a springform pan (approx. 24 cm) lined with baking paper and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 30 minutes.

Then remove from the stove and let cool.

For the chocolate cream, melt the butter in a small saucepan over low heat. Roughly chop the chocolate or break it into pieces and add it to the melted butter, let it melt and stir again and again.

Mix with the honey and let cool slightly.

Then spread the cream over the chocolate cake.

Let the cream set in the refrigerator and then serve the cake well chilled.

Sultusnúður

Jam rolls

I recently had a request where someone was looking for a recipe for Sultusnúður, which they had seen and eaten in an Icelandic bakery, so I went looking for it myself - and found it.

Traditionally, the jam rolls are usually made with rhubarb jam, but I had a few jars of freshly made blueberry jam left here, so I used one. And it tasted wonderful!

Ingredients

300 g flour
300 g oat flour
100 g oat flakes
150 g brown sugar
2 tsp baking soda
1 tsp baker's ammonia
180 g melted margarine
1 egg
250 ml milk

200 g jam

2 Tbsp brown sugar
1 tsp cinnamon
2 Tbsp oat flakes

Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

To make the dough, first mix all the solid ingredients (flour, oat flour, oat flakes, baking powder and baker's ammonia) in a bowl

Then add the melted margarine, egg and milk...

...and knead everything into a smooth dough. If necessary, add a little more flour if the dough is still too sticky.

Then roll out the dough thinly in portions...

…spread with jam...

...roll up and cut into slices approx. 1 cm thick.

Then place the rolls on a baking tray lined with baking paper.

Mix sugar, cinnamon and oat flakes...

...and sprinkle the rolls with it.

Bake in the preheated oven at 350 °F (180 °C) upper and lower heat for around 20 minutes until the rolls are nice and golden yellow.

Bon appetit - verði ykkur að góðu!

Ostkökur

Cheese cakes

I found the recipe for these cheese cookies in an old Icelandic cookbook from the 1940s, and both my children and my mother really liked the cheese cakes. I should have baked more!

PS: I baked the cookies again - this time with herb salt in the dough and sprinkled a little over the cookies before baking, which gives the whole thing a more intense note.

Ingredients

250 g wholemeal flour
1 tsp coarse sea salt
250 g margarine
200 g spicy cheese
1 - 2 Tbsp water

Preparation

Sprinkle the flour and salt into a bowl and add the margarine.

Grate the cheese, keeping a little of the grated cheese aside and adding the rest to the flour and margarine mixture.

Add the water and knead everything into a smooth dough. Form “sausages” out of the dough and let them set in the fridge for about half an hour.

Then cut the "sausages" into slices about 0.5 cm thick, place the biscuits on a baking tray lined with baking paper with a little space between them, sprinkle with the remaining cheese...

...and bake each tray at 350 °F (180 °C) upper and lower heat for about 15 minutes until the cheesecakes have turned nice and golden brown.

Súkkulaðikaka

Chocolate cake (no baking)

If there's no time to bake, then maybe there's at least time to quickly mix together a no-bake chocolate cake and put it in the fridge to set!

Ingredients

300 g Oreo cookies
40 g melted butter
500 ml whipping cream
1 tsp instant coffee powder
400 g cream cheese
30 g powdered sugar
1 pack chocolate pudding (for cold mixing)

Preparation

Grind the Oreo cookies thoroughly in the blender.

Mix with the melted butter...

...and press firmly to the bottom of a springform pan (approx. 24 cm in diameter) lined with baking paper.

Place in the fridge to allow the base to firm up a bit while you prepare the filling.

For the filling, beat 200 ml of the whipping cream with the coffee powder until stiff.

Mix the powdered sugar with the cream cheese until a smooth, supple mixture is formed and mix with the whipped cream and coffee powder.

Mix the chocolate pudding with the remaining 300 ml of unbeaten whipping cream.

Now take the cake base out of the fridge. First put about 1/3 of the cream cheese mixture on the base and smooth it out...

...then spread the chocolate pudding on top...

...and spread the remaining cream cheese mixture over it.

Sprinkle the dark chocolate shavings on top and let it solidify in the fridge for at least 3 hours.

Serve well chilled.
