On Sunday, May 12th, it was Mother's Day (mæðradagur).
After the recent publication of our strawberry book, we are still in strawberry mood - and not just us, but the whole family.
Child no. 2 was actually away for the weekend, but came by on Mother's Day evening with his friend and a load of fresh strawberries they had picked themselves. Cild no. 1 shares my enthusiasm for beautiful decorative items; she had treated herself to a awesome set of strawberry bowls that she lent me for some photos.
To use up the strawberries and to take some photos of the bowls, I prepared my current favorite dessert: Skyrmús .
I only discovered this recipe about a month ago and immediately fell in love with it.
For the skyr mousse, you'll need pure skyr, cream, and sugar with freshly grated lemon zest, vanilla, cardamom, and white chocolate. You can find the original recipe here in this blog post.
For my strawberry skyr today, I pureed 100g of fresh strawberries and mixed them with the skyr mixture, then simply served the whole thing with even more fresh strawberries.
