Saltfish pudding


So, how does fish pudding sound to you? Specifically, saltfish pudding with rice pudding. It sounds pretty crazy - but it actually tastes very tasty and harmless! The fish pudding is eaten with melted butter, we also had Rugbrauð with butter and a green salad.

Traditionally, this dish is prepared with salt fish (" saltfiskur "). I used lightly salted frozen cod here, which is also quite salty, but can be used straight away without having to be thoroughly watered first.


Ingredients for 4 servings

500 g lightly salted fish
100 g rice
250 ml water
500 ml milk
40 g butter
1 pinch of pepper
2 tsp sugar
2 eggs

Oil or butter for the mold

Butter for serving


Preparation

Place the salt fish in a large pot with pure water and cook until the fish is soft and falls apart easily.


Mix water and milk in a second pot and simmer the rice for about 30 minutes until the rice has absorbed all the liquid.


Then remove the rice pudding from the pot to cool, add the butter and stir in.


Allow the rice porridge to cool thoroughly, while carefully removing the skin from the fish.


Preheat the oven to 350 °F (180 °C) upper/lower heat.

Mix the cooked salt fish thoroughly with the rice porridge along with the pepper and sugar.


Separate the eggs and stir the yolks into the fish-rice mixture.


Beat the egg white until stiff and fold in carefully.


Then pour the mixture into a greased form or one lined with baking paper...


... and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 45 minutes.


The saltfish pudding is then served with melted butter.


You can also serve it with rye bread and fresh salad.
