Crab salad


There are already two recipes for crab salad here on the blog (one with mayonnaise, skyr, hard-boiled eggs and dill, and a second version sweet and fruity with whipping cream and apple), but you can never have enough recipes for crab salad. or? Especially since you can actually get a wide variety of different versions of crab salad in Iceland.

So here's a slightly spicier version - with cucumber, red onion and lots of paprika powder. Also very tasty and a great appetizer for people who like to eat crabs.


Ingredients for 2 servings

250 g shrimp
1 organic cucumber
1 red onion
200 g cottage cheese
150 g yogurt
1 tsp hot paprika powder
1 pinch of freshly ground pepper
1 pinch of coarse sea salt
fresh parsley


Preparation

Wash and chop the cucumber.

Peel the onion and cut it into small cubes.


In a bowl, mix the cottage cheese with the yogurt and the paprika powder, ground pepper and sea salt.


Add the vegetable pieces and the shrimps to the bowl and mix everything thoroughly.


Wash and pick the parsley and add it over the salad.


Let the salad cool briefly in the fridge and then serve fresh.

Tómatdrykkur

Tomato drink


Inspired by the delicious tomato drinks in Friðheimar, I went looking for recipes that go in this direction.

Yes, I know, tomato drinks are a matter of taste, I'm actually not the biggest fan either. But with salt, fresh pepper and a little Tabasco it's tasty and refreshing every now and then - and it's a nice vitamin boost too !


Ingredients for 4 glasses

2 yellow peppers
1 handful of cherry tomatoes
1/2 cucumber
1/2 lemon
200 ml cold water

Soda
Ice cubes


Preparation

Wash the vegetables, deseed the peppers and peel the cucumber and cut everything into coarse pieces.


Then put the chopped vegetables in the blender with the water and lemon juice and puree thoroughly.


Then pour into glasses, pour over the sparkling water and serve with ice cubes and a little Tabasco sauce, salt and pepper to taste.

We decorated our tomato drink with some basil.

Tómat marmelaði

Tomato jam


I found this recipe for a delicious, sweet tomato jam on the website of "Sölufélag garðyrkumanna", the sales association of Icelandic horticultural businesses, and tried it out straight away. My children reacted a bit cautiously ("Tomatoes? Jam?!?"), but I actually like it, fruity and delicious!


Ingredients

10 tomatoes
2 oranges
1/2 lemon
200 g sugar
1/2 tsp ground cloves
1 cinnamon stick

Preparation

Carefully cut the skin of the tomatoes...


....dip the tomatoes briefly in boiling water and then rinse them under cold water. Then peel off the skin and chop the peeled tomatoes.


Also peel the oranges and cut them into small pieces.


Place the tomato and orange pieces in a large pot.


Squeeze the lemon and pour the juice into the pot.

Add sugar, cloves and cinnamon stick and let everything cook over medium heat for about 1 hour until the jam has thickened nicely (test for gelling!).


Remove the cinnamon stick.

Rinse the jam jars with boiling water and pour in the hot jam directly.

Tastes wonderful - especially on cheese bread!

Súkkulaði skyr með jarðarberjum

Chocolate Skyr with berries


Sometimes very simple recipes are just good, like this Skyr dessert.

Simply mix skyr with cocoa powder and a little syrup, then add fresh fruit. Ready in no time, tastes delicious - and also looks nice as a layered dessert in a glass!

I prepared twice the amount of cream and served the dessert in smaller glasses, which was enough for 6 people. I usually make the simple amount for two of us and use larger jars (350 ml).


Ingredients for 2 glasses

500 g vanilla skyr
2 - 3 Tbsp cocoa
1 Tbsp light syrup

250 g fresh strawberries
1 Tbsp sugar to taste

Chocolate/nuts to taste to decorate


Preparation

In a bowl, mix the vanilla skyr with the cocoa powder and the syrup,...


...so that a beautifully uniform cream is created.


Wash, clean and chop the strawberries, add a spoonful of sugar to taste and stir in.


Then pour half of the cream into the glasses, place half of the strawberries on top...


...and then finish with the remaining cream and the other strawberries.


Decorate to taste - I added grated chocolate and chopped pistachios (as fresh greens, so to speak) on top of the strawberries.

I prepared twice the amount of cream and served the dessert in smaller glasses, which was only enough for 6 people. I usually make a simple amount for two of us and then use slightly larger glasses.
