Límónu ostakaka

Lime cheesecake


My husband still eats a diet that is as low in carbohydrates as possible but high in protein.

So to make him happy, I made this lime cheesecake for Father's Day. It tasted good, even if it was quite high in calories - and the base was a bit crumbly for my taste.


Ingredients

80 g butter
120 g almond flour
1 pinch of sea salt
1 tsp cinnamon
3 Tbsp brown sugar

500 g cream cheese
250 g mascarpone
5 Tbsp brown sugar
1 pinch of ground vanilla
500 ml whipping cream
1 organic lime


Preparation

Slowly melt the butter in a large pot or skillet over low heat.


Increase the heat, add the almond flour and fry in the melted butter.



Add salt, cinnamon and sugar and mix well. Then remove the pot from the heat.


Place the dough for the base in a springform pan lined with baking paper, press it gently firmly and place in the refrigerator.

Meanwhile, prepare the cheese cream:

Mix the fresh cheese thoroughly with the mascarpone, brown sugar and ground vanilla.

Wash the organic lime and add the peel to the cream cheese-mascarpone mixture, as well as 2 tablespoons of the squeezed lime juice.



Whip the cream until stiff and carefully fold it into the cream.


Then pour the cheese mixture onto the cooled cake base, smooth it out and let it solidify in the refrigerator for at least 4 hours, preferably overnight.

I added some lime zest over the cheese cream here, mainly for visual reasons - I thought it was somehow "cheerer".


Decorate as desired with cream, thin lime slices or similar and serve well chilled.
