Almond cake with chocolate cream


Do you also have days like this where things just don't work?

Here it started quite harmlessly - the baking powder had smuggled itself onto the ingredients picture without authorization, but I only noticed this when I had already cracked the eggs and the ground almonds were mixed and the chocolate was already in the water bath with the butter melted away, I could no longer recreate the before picture.

But when I wanted to whip the cream, I was surprised at some point, it didn't and didn't solidify...?!? Well, then I realized that I had gotten cooking cream instead of whipping cream. So go back and get the real cream... it really wasn't my day!

But the cake still tastes really good!


Ingredients

For the ground

4 egg whites
200 g brown sugar
200 g ground almonds

For the cream

50 g butter
150 g dark chocolate
4 egg yolks
60 g powdered sugar
120ml whipping cream


Preparation

Preheat the oven to 325 °F (160 °C) upper/lower heat.

Separate the eggs.


For the cake base, beat the egg whites until stiff, then carefully fold in the sugar and ground almonds and mix everything into a nice dough.


Pour the dough into a springform pan lined with baking paper (approx. 24 cm in diameter), smooth it out...



...and bake in a preheated oven at 325 °F (160 °C) upper and lower heat for about 30 minutes until the base is beautifully golden brown (test with a toothpick!).


Then take the base out of the oven and let it cool down very well.

For the cream, carefully melt the butter and chocolate in a water bath.



Mix the egg yolks with the powdered sugar...


...and fold in the chocolate-butter mixture.


Whip the cream until stiff and fold in carefully.

Now pour the cream onto the floor and smooth it out...


...and decorate with fresh fruit to taste.


Then put the cake in the cold for at least 4 hours until the cream has set somewhat.


Then serve the cake well chilled, with fresh cream and fresh fruit to taste. Bon appetit!

Oven baked fish with broccoli


We had this recipe for oven-baked fish with broccoli for dinner the other day. Actually, my family isn't that keen on broccoli - but in this form, everyone actually found it edible!


Ingredients for 4 servings

600 g white fish
400 g broccoli
250 g cream
100 g Brie
4 Tbsp sliced ​​almonds
1 Tbsp rapeseed oil
1 pinch of coarse sea salt
1 pinch of black pepper


Preparation

Preheat the oven to 425 °F (220 °C) upper/lower heat.

Grease a fireproof dish with a little oil.

Wash and clean the fish and place it in the mold.


Sprinkle with salt and pepper.


Cut the broccoli into small florets and put them in boiling water for about 1 - 2 minutes.


Then drain well and spread over the fish.


Pour the cream over the whole thing.

Dice the cheese and spread over it.



Sprinkle the whole thing with the sliced ​​almonds.


Then bake in a preheated oven at 425 °F (220 °C) upper and lower heat for about 20 minutes.


Then serve with fresh salad. But it also tastes very good without a side dish!

Skyr buns


I love it when I have enough time on Sunday or public holiday mornings to bake rolls for breakfast in peace and quiet. The rolls here come together really quickly - turn on the oven, put all the ingredients in the bowl, knead the dough, shape the rolls and then put them in the preheated oven for 20 minutes.

The four of us ate these 8 rolls for breakfast - I guess when everyone is there, I'll have to make a double portion to make sure there's enough.

Rolls ( rúnstykki or rúnnstykki ) are not that common in Iceland; you are more likely to find them in the frozen food counter in the supermarket than at the bakery. This is actually a recipe for Skyr bread, but I used the dough to make rolls instead of bread.

Ingredients for 8 rolls

225 g flour
25 g semolina
250 g pure Skyr
1 egg
1 tsp coarse sea salt
2 tsp baking soda
2 Tbsp oat flakes

1 Tbsp oat flakes for sprinkling


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Place the flour, semolina, skyr, egg, salt, baking powder and oat flakes in a large bowl...


...and knead into a smooth dough.


Divide the dough into 8 parts.

Form each piece of dough into a bun...


...and then bake the rolls on a baking tray lined with baking paper for about 20 minutes until they have turned nice and golden.

Then serve straight away - enjoy your meal!

Límónu ostakaka

Lime cheesecake


My husband still eats a diet that is as low in carbohydrates as possible but high in protein.

So to make him happy, I made this lime cheesecake for Father's Day. It tasted good, even if it was quite high in calories - and the base was a bit crumbly for my taste.


Ingredients

80 g butter
120 g almond flour
1 pinch of sea salt
1 tsp cinnamon
3 Tbsp brown sugar

500 g cream cheese
250 g mascarpone
5 Tbsp brown sugar
1 pinch of ground vanilla
500 ml whipping cream
1 organic lime


Preparation

Slowly melt the butter in a large pot or skillet over low heat.


Increase the heat, add the almond flour and fry in the melted butter.



Add salt, cinnamon and sugar and mix well. Then remove the pot from the heat.


Place the dough for the base in a springform pan lined with baking paper, press it gently firmly and place in the refrigerator.

Meanwhile, prepare the cheese cream:

Mix the fresh cheese thoroughly with the mascarpone, brown sugar and ground vanilla.

Wash the organic lime and add the peel to the cream cheese-mascarpone mixture, as well as 2 tablespoons of the squeezed lime juice.



Whip the cream until stiff and carefully fold it into the cream.


Then pour the cheese mixture onto the cooled cake base, smooth it out and let it solidify in the refrigerator for at least 4 hours, preferably overnight.

I added some lime zest over the cheese cream here, mainly for visual reasons - I thought it was somehow "cheerer".


Decorate as desired with cream, thin lime slices or similar and serve well chilled.

Cheese and ham salad


This would be something if you were allowed to have guests again and would like to offer them a small bite to eat.

A cheese and ham salad like this comes in handy. Plus nice salty crackers - and if you want, you can also get a Brennivín.


Ingredients for 6 - 8 servings

200 g brie cheese
200 pepper cheese
300 g ham
2 red peppers
2 stalks of leeks

200 g sour cream
4 Tbsp mayonnaise

1 - 2 Tbsp herbs, if desired


Preparation

In a large bowl, mix the sour cream with the mayonnaise.


Then cut the cheese and ham into small pieces/cubes...


...and add it to the bowl.


Clean and chop the peppers and leeks.


Then mix the chopped vegetables, cheese and ham thoroughly with the dressing.


Sprinkle with herbs if desired - I used chives here, on the one hand for the taste, but on the other hand for the look. I just like having little green herbs over my hearty food!
