Barley cake with dessert wine


At the end of our "Byggvika" there is a recipe for a dessert cake from "Móðir Jörð" - yes, exactly, made from barley. Definitely also very tasty and an interesting consistency. Yes, there will be more of them here!

Ingredients

125 g rolled barley
100 g ricotta cheese
1 egg
1 egg yolk
2 Tbsp Vin Santo or good sherry
1 Tbsp cold pressed olive oil
70 g sugar
30 g raisins
1 Tbsp flour
Salt


Preparation

Cook the barley in lightly salted water for about 40 minutes. Finally let it cool until the barley is still lukewarm.

Place the raisins in the wine/sherry.

Then carefully mix the barley in a bowl with the ricotta cheese and then the egg, egg yolk, raisins, flour and 50 g of the sugar.


Place in a springform pan (22 cm diameter), line with baking paper and carefully brush with the oil using a brush.

Then pour the mixture into the mold and distribute it evenly.


Bake in a preheated oven at 350 °F (180 °C) upper and lower heat for about 30 minutes.

Then sprinkle the remaining sugar over it and heat it in the oven using the grill function until the sugar has turned into a caramel coating after a few minutes.


Remove from the mold and cut into slices.

Then serve the meal with Vin Santo or a good sherry.



PS: Since I'm a bit particular and generally cook without alcohol, I replaced the sherry with apple juice and a small splash of berry vinegar when cooking.
