Bláberjakaka með marsipani

Blueberry cake with marzipan


Ingredients

3 eggs
200 g brown sugar
1 tsp ground vanilla
250 g flour
2 Tbsp potato flour
1 tsp baking powder
1 pinch of coarse sea salt
100 g melted butter
125 g marzipan
50 g dried blueberries
3 Tbsp slivered almonds


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Mix the eggs with the sugar and ground vanilla until foamy.


Then add the flour, potato flour and salt as well as the melted butter and work everything into a smooth dough.



Line a springform pan (approx. 24 cm) with baking paper and pour the dough into the pan.


First spread the blueberries over the dough.


Roll out the marzipan thinly, tear it into as small pieces as possible and spread it over the dried blueberries on the cake dough.


Sprinkle with the slivered almonds...


...and bake in a preheated oven at 350 °F (180 °C) upper and lower heat for approx. 30 to 40 minutes (test with a toothpick!).


Then take the finished cake out of the oven, let it cool down and best serve with vanilla sauce.
