Birthday cake
Last week was my favorite Iceland fan's birthday. So of course there had to be an Icelandic birthday cake, an Afmæliskaka. Here is a very tasty hardcore chocolate cake!
Ingredients
200 g soft margarine
400 g powdered sugar
300 g flour
3 eggs
2 Tbsp baking cocoa
1 tsp baking powder
1 tsp baking soda
1 pinch of salt
100 ml buttermilk
150 ml warm water
chocolate cream
250 g soft butter
360 g powdered sugar
3 Tbsp baking cocoa
3 Tbsp light syrup
Preparation
Preheat the oven to 350 °F (180 °C) upper/lower heat.
Mix all the ingredients for the dough (except the warm water!) in a large bowl.
Then add the warm water and mix very briefly until a smooth dough is formed.
Pour the dough evenly into two springform pans (approx. 24 cm) lined with baking paper...
...and bake in the preheated oven at 350 °F (180 °C) upper and lower heat for about 25 minutes until the base is nicely baked in the middle (test with a toothpick!).
Remove the two bases from the oven and let them cool thoroughly.
To make the cream, slowly heat the butter in a saucepan, then add the powdered sugar and baking cocoa spoon by spoon and mix thoroughly.
Finally stir in the syrup...
and carefully spread the warm cream onto the cold cake with a spatula:
Decorate a little to taste.
Let it set well in the fridge and enjoy well chilled!
