Cauliflower salad with dates and bananas


Here in Iceland, I usually love having chopped dates on my pizza - so I was thrilled when I came across this recipe for cauliflower salad with dates. And had to try it straight away!

However, I recommend mixing the salad and sauce just before serving and not letting the salad sit for too long, otherwise it might get a little mushy.

By the way, a head of cauliflower weighs on average around 800 g - the cauliflower I got here in the store was quite small, only a handful at a time, and weighed around 500 g with everything. So I used two small heads.


Ingredients for 4 servings

1 head of cauliflower
100g dried dates
2 bananas

200 ml AB ​​mjólk
1 tsp sugar
1 organic lemon
1 bunch of spring onions
1 pinch of coarse sea salt
1 pinch of pepper
1/2 tsp cinnamon


preparation

Wash and clean the cauliflower and cut it into small florets.m


Then cook the florets in boiling water for about 5 minutes, then drain the water and pour cold water over the cauliflower so that it gets cold quickly.


Cut the dates into thin strips.


Peel the bananas and cut them into thin, but not too thin, strips.


In a large bowl, mix the cooled cauliflower with the chopped dates and bananas.


Now prepare the sauce:

Carefully rub the lemon peel, then cut the lemon open and squeeze it out.

Clean and chop the spring onions.


Mix the lemon juice with the AB-Mjólk, the chopped onions, sugar, cinnamon, salt and pepper.

Then pour the sauce over the salad, mix and sprinkle with the lemon peel.


Then serve immediately.


We had the cauliflower salad as a side dish and we ate grilled meat and flatbread (flatbrauð) with it.
