Love ring


Here is a recipe for a very tasty, fluffy cake ring with caramel icing. I served the cake with some whipped cream for those who wanted it.

By the way, I sprinkled a little coffee spice on the glaze for the taste and, above all, for the look. If you like, you can of course really let off steam, from colorful chocolate sprinkles to brittle to salted caramel fudge - there are no limits to your imagination!


Ingredients

250 g soft butter
250 g brown sugar
250 g flour
1 tsp baking powder
4 eggs

200 ml whipping cream
120 g soft butter
80 g brown sugar
1 pinch of ground vanilla


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

In a large bowl, mix the soft butter with the sugar, flour and baking powder.



Separate the eggs.

Add the egg yolk directly to the dough and mix.


Beat the egg white until stiff and then carefully fold it into the dough.


Place in a well-greased round shape or lined with baking paper (either a Bundt cake tin or similar or a springform pan with an additional shape for the cutout in the middle)...


...and bake for about 35 minutes until the dough is well baked (test with a toothpick!). Then let it cool down.


For the caramel glaze, put all the ingredients (cream, butter, sugar and vanilla) in a saucepan and bring to the boil.


Then let it slowly reduce over medium-high, stirring constantly, until the glaze thickens (let it simmer for about 10 minutes).

Let the glaze cool slightly.

Finally, spread the icing on the cake in several layers.


If necessary, let the glaze set in the refrigerator and then serve.


Oh, the cake is baked with baking powder - what do you think of these colorful tin cans here? Always the same pattern, but with different colors, and then labeled with "flórsykur" (= powdered sugar), "lyftiduft" (= baking powder), "kakó" (= cocoa) etc.

In fact, the cans are simply sales packaging from the Icelandic company Katla, which specializes in baking items, among other things. I've never seen the can in the supermarket, I have no idea if they're even still on sale, but I'm always happy when I buy one from this range in Selfoss or Reykjavík for 200 or 300 crowns (just under €2). Find a second hand store. I just think they are so beautiful!
