Súkkulaðiís

Chocolate ice cream


I love chocolate ice cream, even when it's getting cold and uncomfortable outside. Most Icelanders can eat ice cream or go on an Ísbíltúr (= ice cream ride) in any weather!


Ingredients

4 egg yolks
100 g sugar
50 g baking cocoa
400 ml milk
100 g dark chocolate
1 pinch of coarse sea salt


Preparation

Mix the egg yolks with the sugar in a bowl until foamy.


Add the baking cocoa and stir in as well.


Then warm the milk in a large pot.


Add the egg-sugar mixture to the warm milk...


...and simmer for about 5 minutes, stirring constantly, until everything thickens slightly.


Cut/break the chocolate into small pieces...


...and also add it to the pot and continue stirring until the chocolate has completely dissolved.


Season with the (lava) salt.


Then pour the mixture into an ice cream maker...


...and freeze according to the machine's instructions (or pour into a plastic mold and freeze in the freezer, stirring occasionally).
