Cocoa soup
Cocoa soup is actually quite common in Iceland; this soup is also regularly on the menu in many schools and it is also a popular, quick and inexpensive everyday meal.
Ingredients
3 Tbsp baking cocoa
4 Tbsp sugar
250 ml water
750 ml milk
3 tsp potato starch
1/2 tsp coarse sea salt
1 pinch of ground vanilla
whipping cream
optionally cinnamon
Rusks/coffee spices or similar
Preparation
Heat the water in a pot. Slowly add the baking cocoa and sugar, spoonful at a time, stirring constantly. Then let the whole thing simmer for a few minutes.
Then pour in the milk.
Add the potato flour to a glass of cold water and stir until it is completely dissolved.
Then add the glass to the soup and let it simmer until the cocoa soup has reached the desired consistency.
Bring to the boil and season with salt and a little vanilla.
Then serve the cocoa soup hot with whipped cream and rusks. If you like, you can also add a little cinnamon, vanilla or coffee spice to the cream.
By the way, cocoa soup is also available as a ready-made dish in Iceland - of course we tried it too. Also quite nice!
