Heilhveitibrauð

Whole grain bread

When shopping in Iceland you sometimes have to be prepared for different quantities than you are used to in other countries. For example, baking powder ("lyftiduft ") is not available in small bags, but in large packages, and flour is usually only available in 1 kg packages or larger packages.

Ingredients

350 g whole wheat flour
250 g wheat flour
2 tsp baking soda
2 Tbsp sugar
75 g butter
300 ml milk

Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Place all ingredients in a large mixing bowl...

...and knead slowly but thoroughly into a smooth dough. If the dough is still sticky, add a little more whole wheat flour until the dough can be easily shaped.

Form two oblong loaves from the dough on a baking tray lined with baking paper and cut into them slightly with a knife.

Bake at 350 °F (180 °C) upper and lower heat for about 40 minutes until the bread is golden brown.

Take the bread out of the oven and let it cool down...

...and then enjoy.

We had the bread for breakfast with kæfa (= liver pate) and gráðaostur (= blue cheese).

Bon appetit!
