Sítrónu skyrterta

Lemon Skyrtorte


I think you can never have enough recipes for skyr cakes, tarts and desserts. So here's another "no bake" version with fresh lemon and lemon curd, wonderfully lemony and fruity!


Ingredients

200 g oatmeal cookies
75 g unsalted butter
250 g whipping cream
350 g vanilla skyr
2 env powdered gelatin
125 g brown sugar
3 eggs
1 organic lemon
4 Tbsp lemon curd


Preparation

Crumble the oatmeal cookies thoroughly.

Melt the butter in a pan...


...add the biscuit crumbs and brown everything slightly.


Then put the butter and biscuit mixture into a springform pan (approx. 22 cm) lined with baking paper and press it firmly.


Whip the cream until stiff.


Mix the vanilla skyr with the powdered gelatin and some grated lemon peel and 1 tablespoon of squeezed lemon juice.

Gently fold the whipped cream into the skyr mixture.


Mix the brown sugar with the eggs until foamy.


Mix the Skyr cream with the sugar-egg mixture to form a smooth cream.


Then pour the cream onto the cake base...


...spread as smoothly as possible...


...and put it in the fridge for about 2 hours, ...


...so that the cake sets.


Then remove it from the mold and carefully spread it with the lemon curd (please don't put it in the fridge beforehand, otherwise it will be too solid!),...


...chill in the fridge for at least another hour and then serve well chilled.
