Kartöflusúpa með beikoni

Potato Soup With Bacon


Ingredients for 4 persons

60 g butter
2 onions
1 tsp thyme
1 pinch of coriander
400 g small potatoes
1.5 liters of water
black pepper
coarse sea salt
Parsley

4 - 6 slices of breakfast bacon


Preparation

Melt the butter in a large pot.

Peel the onions, cut into small cubes and sauté together with the thyme and coriander.


The small potatoes (if they are really small, as Icelandic potatoes usually are, you can use them unpeeled, otherwise peel and dice them first!)...


...and add the water and let everything cook over medium heat for about an hour until the potatoes are completely soft.

Then puree the soup thoroughly, season with salt and pepper and sprinkle with chopped parsley.

Fry the bacon, cut it into small pieces and garnish the soup with the bacon before serving.
