Christmas ice cream with nuts


As already mentioned many times - most Icelanders love ice cream. In wind and weather. Nicely sweet ice cream or soft ice cream with plenty of toppings is also welcome. The recipe here is for cream ice cream - with a little skyr and this typical Icelandic "púðursykur", which is not - as the name might sugest - powdered sugar, but simply brown sugar with a relatively high molasses content.

We had this Christmas ice cream for New Year's Eve - the photo is from New Year's Day, when I photographed the ice cream outside in the deep snow in bright sunshine.


Ingredients

180 g cane sugar
4 egg yolks
150 g vanilla skyr
350 ml whipping cream

1 Tbsp butter
2 Tbsp cane sugar
100 g chopped hazelnuts
3 Tbsp grated chocolate


Preparation

First melt the tablespoon of butter and the two tablespoons of sugar in a pan...


... and roast the chopped nuts, stirring constantly. Then add the grated chocolate...


... and let it melt, stirring occasionally.


Then remove the pan from the heat and let it cool thoroughly.

Whip the cream in a tall bowl until stiff.


In a large bowl, beat the sugar with the egg yolks until fluffy.


Add the vanilla skyr to the sugar and egg yolk mixture and stir in.

Fold the whipped cream into the remaining mixture.


Add the roasted nuts and stir everything together briefly.


Pour the ice cream mixture into a suitable mold and let it solidify in the freezer for at least 4 hours.


Then serve and enjoy.
