Baked beetroot
This baked beetroot tastes good as a side dish to meat dishes, but also makes a great simple starter.
800 cooked beets
3 tsp balsamic vinegar
2 Tbsp maple syrup
2 Tbsp oil
Thyme branches
1 tsp coarse sea salt
1/2 tsp ground pepper
140 g soft goat cheese
Preparation
Cut the beetroot into bite-sized pieces...
...and put it in a fireproof dish.
Mix the vinegar with the maple syrup and the oil.
Salt and pepper the beetroot, then pour the vinegar-oil mixture over the beetroot, place the thyme sprigs on top and bake in a preheated oven at 350 °F (180 °C) for about 20 minutes.
Cut the goat cheese into small pieces.
Take the mold out of the oven, remove the thyme sprigs...
...and sprinkle the beetroot with the goat cheese.
Then bake for another 10 minutes at 350 °F (180 °C) upper and lower heat.
