Brauðréttur

Bread dish


Bread dishes (brauðréttir) are very popular party dishes in Iceland, from children's birthday parties to family parties on June 17th, the national holiday of Iceland. It seems there are countless different variants of these dishes. Here we have a version with leeks, bacon and salami - my youngest is a big salami fan.

Depending on how many eaters you expect, you can adjust the recipe in terms of quantity wonderfully. For many guests, large portions can also be prepared in a deep baking tray.

By the way, you can prepare the dish very well the day before: Just follow the recipe, but instead of putting the dish into the oven, cover it airtight and place it in the refrigerator. The next day, when the guests arrive, you preheat the oven and simply put the prepared dish into it. 


Ingredients for 4 servings

50 g bacon
1 small pkg. salami
2 leek
8 slices of toast bread
250 g cream
150 g pepper cheese
grated cheese


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

Cut the bacon into small pieces and fry them in a large pan.


Wash the leek, cut into thin rings and add to the pan.



Cut the salami into small pieces and add also to the pan.


Fry everything well.


Slowly heat the cream in a small saucepan.

Cut the pepper cheese into pieces and melt in the cream.



Tear up the toast bread and place in an ovenproof dish.


Spread the leek-salami-bacon mass from the pan over the bread in the casserole.


Pour the liquid cream and cheese mixture over it and sprinkle with the grated cheese.


Place the mold in the oven and bake at 350 °F (180 °C) upper and lower heat for about 20 minutes until the grated cheese turns golden brown.

Then serve the finished food directly.
